1 ½ lb. fresh cod cut into four pieces

½ cup gluten-free oat flour

2-3 tablespoons honey

3 tablespoons olive oil

Sauce:

1 tablespoon butter

1 clove garlic finely chopped

3 tablespoons honey

Juice from one lime (or two if you like more tang)

Cod dredged in flour and drizzled with honey

Coat pieces of fish with flour and drizzle with 2-3 tablespoons honey.

Add the olive oil to a large heated fry pan (I use cast iron) and place fish in hot oil.

Fry on medium heat about 7 minutes per side, until nicely browned. The fish tends to flake apart – the only drawback to this recipe. When it is cooked through and browned on both sides, remove from pan and place on a plate.

Add the butter to the fry pan, then the garlic and sauté for 30 seconds on medium heat. Mix lime juice, 3 tablespoons honey and salt & pepper to taste. If you don’t have lime juice use lemon or a little white wine. Stir and heat just until hot and thoroughly mixed. Pour a little over each piece of cod and serve.
