Gluten-free Granola

This is a gluten-free adaptation of a recipe for granola that I have made for years. This one is as yummy as the original.

In a large bowl, mix:
5 cups gluten-free oats
1 ½ cups Corn or Rice Chex or some other gluten-free cereal
1 cup chopped walnuts (or your favorite nuts)
2/3 cup corn meal (undegerminated is best)
½ cup roasted sunflower seeds
½ cup flax seed

Heat until thin and easy to pour (I use the microwave), then add gradually while stirring into the mixture of oats, seeds, & nuts. Mix well until dampened:
½ cup honey
½ cup canola oil

Transfer to a cookie sheet and bake at 300° F. for 10 – 12 minutes. Gently stir, turning the mixture over as much as possible. Bake another 10 – 15 minutes until the mixture is lightly browned on top. Let cool for 10 minutes.

Transfer to a tin or air tight container, adding:
1 cup raisins and/or other dried fruit.
